Thought I would post this for anybody interested in connecting their Xbox via HDMI like I have done.
The setup is really simple. First you will need one of these

Then you need an HD AV adapter to connect to the Xbox, here is one I found

All that is left is to get the component video and toslink optical audio and HDMI cable. Here are some from monoprice.com

Once you have all the parts, just put it all together. This part could not be simpler, the component cables are colour coated so match colours to same colours on adapter and converter. Optical audio cable port to optical audio cable port and then finally the HDMI into the back of the converter.
Caution though, once I plugged the toslink optical audio into the Component (YPbPr) & S/PDIF Digital Coax/Optical Toslink Audio to HDMI Converter, I was not able to get the cable back out of the port. So make sure to choose the proper length cable you want the first time, just in case.
I am not sure if this would work with a PAL format only TV, but I know for sure it will work with a NTSC one. There you have it, enjoy your original Xbox connected via HDMI!
